Quick stir-fried spinach
This is a great way to prepare any leafy vegetable. It’s fast too – you can prepare this tasty dish in minutes.
400 g (1 lb) spinach
2 garlic cloves crushed
1 or 2 tbsp vegetable oil
1/2 tsp salt
1 tbsp light soy sauce/ oyster sauce
a few drops of sesame oil (optional)
Method
Wash spinach thoroughly, cut or tear leaves into 10 cm pieces.
Heat the oil in a wok. When hot, add the garlic then add the spinach, turn and stir.
Cover and cook for 1 minute.
Pour away excess liquid. Add salt and soy sauce or oyster sauce.
Stir and mix well. Serve hot with rice.
