Braised eggs

If you have tried out the recipe for soy-braised chicken, then you should have some sauce left stored in the refrigerator.

Method

The method is very simple. All you have to do is to hard-boil 6 eggs in water for 5 minutes or so, then carefully remove the shells and simmer them in the sauce over a gentle heat for 15-20 minutes, turning the eggs over now and again if there is not enough sauce to cover them all completely.

Turn off the heat and leave the eggs to cool in the sauce, for say 2-3 hours. Just before serving, take them out and cut them into halves or quarters. Arrange them on a plate either on a bed of lettuce or decorated with pickled radishes.
